ORGANIC 12-YEAR AGED BALSAMIC VINEGAR OF MODENA "TRADIZIONALE" Traditional balsamic vinegar (Tradizionale) is a special luxury of the Emilia-Romagna region of Italy. According to the vinegar Consortium "Tradizionale" must be aged a minimum of 12 years in wood barrels, typically six different types, and then inspected for quality. Acetaia Cattani were the first producer in Modena to be certified organic. So powerful are the flavors that tiny droplets on your dish are all that's required.
